Healthier Alternative: Thai Peanut Chicken & Sweet Potato Noodles

Hello everyone,

Today, I want to share a delicious recipe I tried tonight that I found on Pinterest. The recipe is from Iowa Girl Eats. This is a great alternative if you are trying to stay away from noodles and still want to enjoy a good meal. If you are having a craving for Thai food, I strongly suggest this recipe. It’s very tasty! I’ll definitely do this one again.

This recipe is Gluten free & Serves 2-3 people.

What you will need:

Meat

  • 2 Chicken breasts (14oz,)

Produce

  • 2 cups Broccoli florets
  • 1 clove Garlic
  • 1/4 tsp Ginger, ground
  • 2 Sweet potatoes, medium

Canned Goods

  • 3 tbsp Chicken broth, gluten-free

Condiments

  • 1 tsp Chili garlic sauce, gluten-free
  • 2 tbsp Peanut butter
  • 1 1/2 tbsp Tamari or soy sauce, low-sodium gluten-free

Baking & Spices

  • 1 Salt and pepper

Oils & Vinegar

  • 2 1/2 tbsp Olive oil, extra virgin
  • 1/2 tbsp Rice vinegar
  • 1 tsp Sesame oil

Liquids

  • 1/4 cup Water

Tips

To save you some time, I strongly recommend buying a spiralizer to make the noodles. It makes it so much easier. I used the Starfrit spiralizer to make the sweet potato noodles, but if you don’t have one, you can cut the sweet potatoes into small julienne.
