In the quest for healthy eating, I’ve come across this recipe that I would like to share with all you.
Grilled Caprese Salad from the Good Housekeeping website.
With the cost of food getting higher, I always try to find recipes with minimal ingredients to lower the cost for grocery. Let’s just say this recipe is great!
Are you always finding reasons to go out on a Friday night because you want to eat something quick? Well if you are watching your diet, this recipe will do the trick.
It is delicious and feels like a cheat meal and it’s not hard to make.
In this recipe, they are using a fresh pizza dough, but if you’re in a rush or don’t want to spend too much time, you can use Pitas or greek flatbread and it will taste as amazing and most likely fewer calories. I am not a professional dietician, but I think this pizza is a pretty good alternative to that greasy pizza we get from the pizzeria, PLUS it looks and tastes fresh!
Ingredients needed for this recipe:
- 1 lb. mixed tomatoes
- 1 clove garlic
- 1 tbsp. olive oil
- 4 tsp. olive oil
- Kosher salt
- ¼ c. Fresh basil
- 1 lb. pizza dough (thawed, if frozen)
(you can use the alternative I’ve mentioned above instead)
- 4 oz. part-skim mozzarella
- 3 c. arugula
- Shaved Parmesan
